Motorcycle Repair: My bike stalls when to choke is not on, intermediate jet, classic model

Hello, I own a Yamaha yr2000  XVS650 classic
model. I purchased it used in 2001 with 4500 miles
and I now have 8700 miles. I have been consistent
with scheduled maintenance.  As you can see, I dont ride it very much and after setting for
about 2 months, I decided to ride it. It started
up quickly and idled well with the choke out.
However, after discontinuing the choke and attempting to move forward, it stalled and turned
off.  Each time I restarted the bike, it immediately stall. Prior to that incident, I did
run out of gas. I am getting all kinds of estimates, like rebuild the caburetor, tune up,
clean the fuel lines etc...$800.  I would very
much like your opinion. Do you know any honest
repair establishments in San Diego, Ca?

I usually only answer questions on harleys, but I might be able to help you.
Sounds like your intermediate jet in the carb is plugged and that is why the bike only runs when the choke is on. You can pull the carb, remove the bowl and jet and clean it out.
As to knowing any repair places in your area, sorry, but I dont. I am in Ohio and dont know anyone out there.
