Motorcycle Repair: Tuning a super e Shorty carb, air fuel mixture, intermediate jet

I need to know the right way to tune my super e carb. I have a 78 flh with a 74" shovelhead. I noticed the other day when the bike temp got in normal operating range it was idling a lot faster than normal. When I shut it down I had a very hard time starting it again. I have a hard time starting it and I know it is the carb. I was a jet engine mech so I have some mechanical ability and have messed with carbs before but this one is out of my realm. I need help with this one because she is collecting dust in the garage. Thanks for any info you could offer.

Start by locating the three screws on the top of the carb. the one on the left is the idle, center (large one) air/fuel mixture screw, and the one on the right is the pumper. Start the bike with fresh spark plugs and let it warm up. Turn the pumper screw inward until it bottoms. Now turn the air/fuel mixture screw inward, just until the bike starts to stumble and then back out 1/4 of a turn. If the bike idles to fast then turn the idle screw outward until you get the idle set.
Now go for a ride for around 5 miles. Stay under 2500 RPMs without reving the bike high between gears. What you are doing is checking the intermediate jet.If the bike bogs then the jet is to small, if it spits through the carb then its to big. After changing the intermediate jet now you need to check the main jet. Go for another ride and rev it up or ride normal. Same thing, if it spits through the carb then the main is to big, bogs and to small. It will bog between gears since the pumper is turned off. Everytime you make a jet change you need to readjust the air/fuel mixture.
Once the jets are set open the pumper about 1 1/2 turns. GO for a ride and rapidaly open the throttle. If it bogs open the pumper screw a little further. Keep doing this until you get it set.
