Do I have to take the transmission cover off to get to the pin?

No, the CV pops out when you have the rest of the assembly out.  That is, remove the tire, and disassemble the tie rod end and the strut at the spindle.  Then, take a pry bar and pop the CV out of the transmission and you will be fine.  If you jack up the driver's side enough, the fluid will only leak a little.
