Small Engines (Lawn Mowers, etc.): 17hp Kawasaki in John Deere 185, john deere 185, long periods of time

I have a JD 185 with a Kawasaki 17hp single cylinder ohv engine in it.  The problem is, after you work it for a short time, it starts sputtering and will die if you aren't quick on the choke.  It can run sitting still for long periods of time at full speed and it never dies (I've ran it up to 45 minutes and finally shut if off).  But if I start it and begin mowing, within minutes it will start sputtering.  I can then choke it and run a short time longer.  Eventually the choke isn't enough to keep it running, but if I shut off the mower, it will continue to run.  The same occurs if I don't mow, but instead just try and drive up a hill.  

So, it seems heat related and yet to me, it doesn't make sense that the choke can "save" it.  Also, if it does die...it will start right back up.  I have replaced the fuel pump.  

My local shop lost their good mechanic and has gotten a bad reputation of throwing parts at issues until it finally works.  So, I don't feel like I have a place I can take it.  Hope you can help.

Problem: Engine lacks power (possibly after warmup).
Possible causes:

  1. Old gas, bad spark plug, very thick/dirty oil.
  2. Choke is partially closed.
  3. Carburetor needs adjustment or service.
  4. Ignition not timed correctly.
  5. Air filter is clogged.
  6. There is a lack of lubrication.
  7. Valves are not sealing properly.
  8. Piston rings are not sealing properly.
  9. Head loose or head gasket blown or damaged.
