Towing Issues: car townig, 2008 buick lucerne, buick lucerne cxs

I just purchased a 2008 Buick Lucerne CXS with the norhthstar V8.I have pulled my Harley on a small utility trailer with a 1999 Olds Intrigue with a V6 for a couple of years.The bike and trailer weigh about 1300-1400lbs.Both cars are only rated for 1000 lbs.I see hitches for the Buick for up to 3500 lbs.Can I get a hitch for 3500lbs and feel confident towing my setup and maybe even upgrading to an enclosed trailer

I am sure that you can get a hitch for just about rating, but that does not change the tow rating of the vehicle...
There are lots of things that determine the tow capacity.

Engine size, transmission, tire size, axle ratios, all that work to make it able to tow..
