Toyota Repair: overheating 85 celica convertible, temp gauge, temperature sending unit

Just managed to catch you available for the follow up.  It isn't a stop and go problem.  It overheats during steady driving on the highway, until something kicks in and it immediately drops back to normal.  It doesn't overheat in local driving.  Highway driving it goes steadily from cold to red zone or close to it, something triggers/kicks in and it immediately drops back to mid range (normal).

It has developed a habit that only happens in cold weather.  Once I start it and drive it, it will heat up to the far end of the gauge (sometimes in red) before the system kicks in and suddenly the temp drops immediately back to normal in the middle of the gauge.  I've had it checked at two different dealers and the thermostat has been replaced.  No one can tell me anything that might be the problem.  If I'm going anywhere I'll be driving at high speed for a while, I have to let it run 5-10 minutes warming up before I drive.  Local driving it will warm up as it goes.

Does the engine overheat while driving on the highway at steady speeds above 60mph or does it only overheat in stop and go situations? I know you said at local driving it will warm as it goes, does it mean it doesn't overheat then?

A drastic change in engine temperature like this from overheating to normal in that short of a time span doesn't seem possible,  it sounds more like there may be an electrical problem maybe with the temperature sending unit or the temp gauge in the dash, try replacing the temperature sending unit on the engine.
