Answer
01 and 02 s60's, v70's were famous for that.  Everything looks okay, it blows cold, and then it just will stop.  It takes a little while to be duplicated at the dealer effectively but I have a system for making it work.  Regardless, you're problem is the A/C compressor.  There's no diagnostic in the computer for it so it won't leave a code.  What happens is the compressor clutch (which has started wearing out at this point) gets hot after being activated for a long time.  Then when you hit the gas and the clutch deactivates, it never kicks back on. The computer is requesting it but it just won't move.  So the solution is to remove the compressor and replace it (or at least the clutch).  At the dealer we only replace the compressor.  I am 99% sure that is you're problem.  And I'm only leaving the 1% chance in there because anything can happen.  have them leave the car idling for a while (usually 30-45 minutes)  and then floor the gas for a quick second.  That will tell the ecm to deactivate the compressor.  Then it most likely will not kick back on.  Then they can tell for sure its the compressor.
