Cadillac: Cadillac getting hot, cadillac eldorado, head gaskets

Well where to start... I got a 1996 Cadillac Eldorado and it is STILL getting hot. So far I have done the following: Replaced the radiator, thermostat, Water pump, and even change the head gaskets and got the heads reconditioned. (Sat at the shop for a while) After the head gaskets were replaced, the car would run OK but still would get a little hotter than normal at times. My alternator went out last week and I changed it. First day after I changed the alternator I took it on a test drive and the car immediately got hot again. I checked the coolant level and it was fine, The fans are both working and do spin up fast when the engine does get up to temp. What do you think could be causing this? Since the head gaskets were replaced already I'm out of ideas. Might just end up replacing the thermostat again to see if it helps. ?:|

Normal engine temp BEFORE the fans will kick on is between 220 and 240 degrees.

Put a thermometer in the radiator cap inlet and see what the actual temp is. Since HEAT RISES this will be the hottest spot in the system since it is the highest.

Could have a faulty sensor or faulty dash gage.
