QUESTION: How difficult would it be to replace the evaporator part for the air-conditioning?  Do I need to pull the dashboard out and what book/manual would you reccomend to assist with this endeavor?  Last but not least how many hours roughly?
ANSWER: Sorry al never replaced one of these on this model.  However I would get a trained technician to do the job it will cost more up front, but you know it will be done right.  AC is hard to deal with you need at least a set of gauges and need to put in a precise amount of freon and oil.  Hope I could help in making your decision!

It is a difficult job.  You do have to loosen the dash to remove/replace the evaporator, you do not have to take it out.  I don't know what manual to go by, its pretty straight forward, just make sure your connections are good, with new seals.  Book time pays 3.8 hours, it'll probably take more time though.  Hope I could help, and have fun!
