Auto Insurance Claims: Motorcycle injuries/uninsured motorist, Motorcycle injuries/uninsured motorist

My husband and daughter were hit head on (on his motorcycle) by an uninsured driver about one year ago.  My daughter is okay, but we have not yet accepted settlement from our insurer(I waited until we had info for both of them). My husband has undergone extensive treatment and therapy for injuries to both wrists.  Each visit to the doctor required 2-3 hours (they would verify this) of mostly wait time.  He underwent an "MMI" rating a couple of weeks ago and we just got the report.  It states that he has 13% strength loss on the right wrist and 11% strength loss on the left wrist. Both sides indicate that he "passed the Jamar bell curve and had low CVs".  

I believe our uninsured motorist provision of the policy allowed $25,000 for each individual and $50,000 per incident. They have offered $4000 for pain and suffering for my daughter (she had no lasting injuries), and have asked me repeatedly to sign off on that. Now it appears my husband has lasting injury.  

How do we determine what to demand for his injury? This may be a stupid question, but is the $25K per person policy limit the max we can collect for him? Does that 25K include his medical bills, which are several thousand dollar?

I know this is not a giant claim but I am unsure how to proceed.  Any direction you can provide will be much appreciated.  Thank you.

I am not sure his injury would be worth 25K or more (or less, for that matter) as I do not have all the records in front of me, but a skilled lawyer might be able to get a better settlement for your daughter as leverage to get a release from your husband. Also, consider this eBook:
