Should I change spark plugs wires? How necessary is it?
Should I also change water pump together with timing belt?

Can you please explain why fuel filter does not need be changed?

Finally, I was advised to use Nissan original parts. How do I know who manufactured OEM parts for my Quest and where except on Nissan dealerships I can buy Nissan OEM parts?

I have Nissan Quest 2001 with 102K miles on it. I believe time has come to do a tune up and replace timing belt. Since both are very expensive I am collecting quotes from different shops. To make sure I am comparing apples to apples I want to know what tune up includes at this mileage on my car. Also when changing timing belt only belt needs to be changed or anything else with connection to it? I checked online and found there is just belt and there is belt kit which is much more expensive then belt itself.

Change the timing belt.  Change the idler tensioner pulley with it.  I would purchase the kit...
Change the plugs
Change the Positive crankcase vent valve (PCV)
Change the air filter
No fuel filter to change since it is in the tank and is part of the pump

The fuel filter is in the gas tank and is part of the pump.  Nissan deleted the normal fuel filter so it is really a nylon sock and does not need to be replaced.  It just filters particulate matter.  When the pump fails the filter gets replaced as part of it.  So, no need to change it for now.  If the plug wires are good I would not change them.
