RV Repair: dometic rm2652 fridge freezes everything, thermister, technician level

Question
How do I change the thermister? Is this something I can do myself?  Will I have to 'pull' the unit out of the mounting?
Currently My Dometic rm2652 freezes everything solid!

The thermistor replacement comes in a kit with a set of instructions, but typically the instructions are written at the "technician level. Depending on you skill level you might be the person for the job.
It is possible to do without removing the box, but you'll wonder how.
