Answer
My recommendation is to read up on the bikes you're interested in purchasing in motorcycle magazines and online. You'll find good stats and comparisons at webbikeworld.com, totalmotorcycle.com, and various forums.

Generally, the bigger the engine, the faster the bike.

Four-cylinder sport bikes in the 600-1000 cc range seem to be the fastest on the race track: GSXR1000, ZX10, CBR1000RR, R1, and Hiyabusa, though the 'busa isn't a good track bike.

Two-stroke engines seem to be faster than their four-stroke counterparts, i.e. if you have a two-stroke 550 cc engine and a four-stroke 550 cc engine, the two stroke will be faster.

Hope that helps.
