A typical valet switch will only have 2 connections on it, not three.  Typically one of the wires is indeed a ground and the other feeds that ground back into the brain.  When the brain sees a sequence of grounds to the wire it responds accordingly.  You should be able to pick up a valet switch for under $5, just stop into any local install shop and ask them to sell you one.  I have at least 20 sitting in my box from various projects so a store should have plenty available.

If you have three wires for the switch then this would be a non-standard setup and I would need to know the exact make and model of your system to do some searching for a manual.

Answer
Yes those sound like the correct wires, post the exact model number of the Viper and your email address and I will send you the owner's and installation manuals.  They will list every option the unit has as well as explain every wire going to the system.
