can i hook up an amp and sub to a factory stereo on a 06 tahoe

You can do just about anything you want with enough time and effort. ;)

In this case, yes.  You would need to get an amplifier that has speaker level inputs as your factory stereo doesn't do low-level outputs.

Then, you'd tap into your regular speaker wires, and run those to the amplifier, and install the amplifier the same way you would in any other system beyond that.
