GMC Repair: optimum temperature, upper radiator hose, mechanic check

2000 GMC K2500 pickup 5.7l vin code R
Problem temp gauge hovering at 160.
Changed thermostat 2x, new ECT sensor, flushed cooling system 2x. Heat is working great. Upper radiator hose is warm, not hot. I can hold onto it.
The fan clutch seems to be working (is there a way to test the clutch?)

Hi
Could be a guage issue, have vehicle scanned and look at ECT temp on a scan tool vs. temp displayed on guage.
Also the ECT sensor for guage is in left head (1 wire green), just above #1 spark plug.
There also is one on manifold (2 wires yellow and black).
Have a experienced auto mechanic check the clutch, although I doubt it is making vehicle run too cool. If bad like this it would be spinning just like a straight bolted fan (same speed as engine).
