Dodge Repair: May 2001 2.0 Automatic Neon Overheating, clean as a whistle, watching the water

Question
Twice my car has overheated (temp gauge rises,on turning off the engine- major bubbling noises and water is ejected from coolant reservoir) following journeys of about 25 miles - mainly motorway then slower roads for about 3 miles). I have checked the oil (via the dip stick) and it is clean as a whistle. I have checked the pump by taking the cap off, letting the car idle, watching the water warm up, overspill, then the thermostat opens, the water level drops and I can see the water flowing freely.  The fans both work normally.  Today I drove 20 miles in slow traffic - there were major bubbling noises and the temp gauge was rising but the water did not overspill.  Please can you help/provide any suggestions?  I do not trust my local Chrysler garage for reasons too lengthy to report here.  I need my car to be reliable to go to work, etc.

Thanking you in advance for all your help.

Regards

Heather
