Mercedes Benz repair: Mercedes Benz 560 sel overheating, radiator hoses, clutch fan

I have a 1989 560sel 4 door and it is running hot or overheating. I've replaced the rediator. Took apart the theromostat, made sure the clutch fan spins, pulled off the top hose and cranked it over to make sure there was water flow. Today I installed the new radiator and made sure everything was put back right and filled it up with a mix of water and Pentosin antifreeze.
Ran the car for apx 5 min to make sure there were no leaks and then took it for a 4-5 mile drive in no traffic.
The car is running at 100 mark (212) degree's
after a 5-10 min drive. I then parked it in the garage to check for leaks again and there were none. Overflow tank looks to be right on the mark.
((One other thing, Before I replaced the radiator I ran a pressure test on the coolin system.
I hooked the pressure tester when the car was cold and ran it in the garage and after about 10 min, the temp went to almost 120 mark (248) but the pressure tester hoovered around 7-11 lbs.
It was a slow build to the 7-11 mark and when I shut off the car the pressure went down slowly.
My wife drives this car and we are a little worried she'll end up on the side of the road.

What could be causing the high temp, it always
ran at about 80-85 or (175-185)

Any direction would be appreicated !!

You may not have a problem.
Buy a 3M™ Infrared Thermometer, and check engine block, thermostat housing, radiator hoses and radiator temperature.
Very possible there is air trapped in the system, or the engine temperature sensor/gauge is defective due to age.

Never take apart the thermostat, replace it with new.
You need the clutch fan to lockup when hot, not spin free.
