I own a 1999 honda shadow 1100c2 ace and I'm replacing the handgrips. How do I get the old ones off?

Will get you to illustrations of your machine. Check the add vehicle option, then HONDA motorcycle, then the model VT1100 Shadow American Classic, then the switch/cables option. The plastic end covers either screw off or pop off the ends of the grips. The easiest thing to do to get the rubber parts off is to cut them with a razor blade/box cutter, lengthwise.
