Motorcycle Repair: S&S carb, air fuel mixture, harley shop

Question
Bought a 1991 fxstc with an S&S carb.  The bike had 1500 miles on it and at the time of purchase it wouldn't start.  This brought down the price considerable and turn out to be a connector jared at the frame.  I did however play around with the carb screws and have always had a pop or two on heated starts and the choke never realy worked well.  I don't know what jets are in there and am not looking  for any more performance I just want to know how to tweak the carb by ear.  Which screw does what and what screw is for the Idle.  The carb was put on in 1993 and I think it is the E model.  The plugs are a shade of brown but not a dark shade and no build up ( i think they look normal).  Bike responds well when I get on it. It's just when I'm at an idle or when I start off the line that it drops an pops expecialy when it is hot. I was told that the ingnition is a good one and don't think it has been cammed, although I'm not sure. I bought the bike three years ago in FLA, a friend of a friend and have no history on the bike. Also is there a way to touch up the black on the jugs.  I believe the 91 was a paint.       Thanks Steve

Answer
Hi steve
you need to first shut off accell pump to thr right of the carb and then adjust the brass air fuel mixture screw . tun it in untill it starts to die and then back it out 1/2 turn Now wick the throttler it should stunble. Now turn out the accel pump screw 1 full turn and wick the throttle if it stumbles turn it out 1/2 turn and test again keep doing this untill it has a instance responce.   you can buy the black wrickeal paint at the harley shop.  Johnny
