Why would you have to press on the gas of a fuel injected '86 Nissan 200SX for 5 minutes when starting or the car will stall?

Sounds like the engine is flooding due to stuck injectors.  Get a fuel pressure gauge and verify that the injectors are leaking by noting the fuel pressure when you trun the engine off and see how long the pressure stays.  Chances are the pressure will drop off immediately and that means a leaky injector or two.
