Oldsmobile/Buick Repair: fan, intake manifold gasket, coolant level

i have a 1995 cutlass supreme engine 3.1
the car fan start very late more than 3/4 hot and some times the car stop working, but start running again,
i change everything like thermostat,temp. sen.coolant level sensor,fan relays. and is the same, any suggestions than you

Check for coolant level.
If there is no coolant it will run hot. I would take it to a shop and have the computer scanned and see at what temp. the fans are actually coming on. The gage MAY be wrong.
Also check and see if there is a leaking Lower intake manifold gasket. This engine is REALLY common for having bad gaskets.
