what exactly is this and what is done to clean the air induction?

Answer
The procedure can vary from dealer to dealer or independent repair shop but  basically it involves cleaning the inside of the throttle body, the carbon built up is  removed(good idea) because it can  cause stalling and idle problems. A fuel injection cleaner is introduced into the intake system to clean some of the carbon deposits off the valves. That's the most basic service, some dealers will include removing the idle air control valve and clean it, carbon in the IAC valve can also cause idle problems, remove the mass airflow sensor and clean it depending on what year and model it is, this procedure is more expensive but a good idea if the car has a lot of miles on it.
