Volkswagen Repair: cooling system on Jetta, jetta 2, valve job

1995 Jetta 2.0 5-speed. Just rebuilt, bearings, rings, valve job. Block cleaned and honed, not bored. What is the trick for filling the cooling system. I have replaced all of the hoses, overflow tank. It seems like air gets trapped in the system so it won't fill all the way. If it's not filled properly it gets hot quickly. Then your able to add water. Thanks

You can try removing the upper rad hose and filling the block, then reconnecting it and top up the reservoir.  If you still have air in the system after this, your head or headgasket is leaking.  Did you install a new one?
