Used Cars: selling a car in OK with a TX tag, selling a car, dmv

The car I am selling was the car my wife drove, but it is currently registered to her mother.  My MIL has signed over the title to us.  We aren't driving it right now.  We aren't driving it right now.  At what point do we have her cancel the insurance on it?  I want to let people test drive it, but don't want them to drive it home on my MIL's insurance.  How does this work?  Thanks.

Personally, I would phone to cancel the Insurance the moment the deal is sealed.
