Vintage Cars: heavy acceleration problems, acceleration problems, maximum acceleration

QUESTION: When I push my acceleration pedal to the floor my 1989 560sec does not respond but if I lift off the pedal a little it responds.  This problem only happens if I step on the pedal all the way to the floor.  I'm not able to get maximum acceleration because the engine seems to flutter as if it does not know what to do if I push the pedal to the floor.  I don't have to lift all the way off the pedal for it to start giving me acceleration but just lift off the pedal a little.  What do you think could be the problem.  Is this something that an average mechanic can handle or do I need to take it in to the shop?

ANSWER: You are either not getting enough gas to the intake or too much air into the intake
Could be lots of things  - like your butterfly valve on the intake is sticking open or opening too quickly, it can be adjusted  ,but you need to know what you are doing.  Other issues could be vacuum lines broken or leaking. Very sensitive to vacuum issues
Could also be a timing issue or worn injectors
Any other symptoms.  How long has this been going on, what is the service history.  How many miles?

QUESTION: On May 2, 2008 I purchased and drove this car back from Seattle, WA to St. Louis which is about an 2100 mile trip in which the car gave me no problems.  Having owned this car for three months, about a month ago when I was driving my car for an hour-long period of city driving, a strange thing happened.  For about a ten minute period when I stepped on the gas the engine would accelerate roughly sounding like a muscle car for the beginning stages of acceleration only.  When I stepped on the pedal the engine would idle roughly only for about half a second and then respond normally.  This only happened for ten minutes of the hour long trip and stopped happening during the trip and never happened since.  
About two weeks ago my present issue started.  I don't think it's a timing issue or even worn injectors because this issue happened all of a sudden and not gradually.  Also no other symptoms are apparent.  The car idles smoothly and runs well it high speeds.  I am the third owner and the second owner kept very good records.  The car has 193,000 but got a top-half engine rebuild at 173,000 miles.

Answer
fuel pressure regulator could be a possible culprit.  I believe yours may be  adjustable, small increments clockwise makes a huge impact, 1/8 turn at a time is recommended. IF it is the problem the fix is immediate.  Turn back if it dose not make a difference
The other is throttle plate, have you looked at this while having someone work the gas pedal?
