Answer
Hi Daniel:

Your question is a good.one.  The VATS systems can be bypassed with the proper resistor spliced into the lock cylinder harness.  for complete instructions click on this link.

It will tell you exactly how to accomplish this bypass.  The problem you have though is that you don't know what resistor to use as you don't have the key.  GM keeps this information for 13 years and then it is inaccessible.  So now, the only way to determine the correct VATS code is to use a VATS decoder.  There are 15 different codes.  A technician will have to plug in the decoder and attempt all 15 in sequence until the car starts.  There is a wait period of 4 minutes between each attempt, so you could potentially be doing this for 1 hour before you hit the correct code.

Our company does this in upstate NY and the cost for this diagnosis and bypass is $275.  It's the time and equipment that make it cost so much.
Check with a mobile locksmith company and see if they have the VATS decoder to help you

Good luck
