Answer
Hi Ed,
Unfortunately from what you describe it is likely the transmission has seen very hard use and perhaps abuse. The transmission generally has two shafts; one is connected to the clutch and the other connected to the drive sprocket or drive shaft. Some of the gears in the transmission move and have 'dogs' that engage other dogs; some have 'collars' they slide into to engage instead. Some of the gears are stationary and don't move on the shaft, they are locked in place with splines and clips or are part of the shaft. Other gears do move, some slide and some turn on the shaft. These dogs and collars are what connect the gears physically to transfer the power to the wheel. The dogs are normally square shaped and engage on the same square dogs of another gear, or into the collar (holes) of the other gear. When a transmission starts jumping out of gear it most often indicates the dogs are no longer square, the edges have been chipped or broken off and now the dogs are not pulling at a 90 degree angle but something less, now they push sideways on the movable gear instead of just down, turning it.
Instead of it looking like the example below, where the top brackets (dog) can push straight down on the bottom one and no sideways pressure is felt.

They look like these below; as you can see, if the upper dog was pushing down on the lower dog it would be pushing down and to the side; in this example to the right.

Now this gear slides on the shaft and the transmission jumps out of gear. Most probably the transmission needs some gears replaced. This will likely be a costly repair.

Sorry to be the conveyor of bad news.
Terry.
