well bill thanks for thaking the time 2 anser my question.iv just rebuild my whole vn750 from spliting the case all the way to anti-freeze.so i built it back up and it runs good, know it runs damn good.but it  will not run without the choke on,or crank without.but now that i think about it when we first got the bike it would not run without it,so the first time we built the motor it waz blowing gas out of the front exhaust manifold,took it to the shop and got the cleaned out it did't do it anymore but did't run without the choke still,(did't matter cause timeing was wrong it sounded like a buzz saw and blew up the rear piston and head)so now im thinking like it might be the pilot jet,passways, or something of that nature i dont know.please help thanks.

Hard starting/no starting issues are generally caused by blocked pilot jets, assuming that you have no intake tract leaks, adequate compression, correct cam timing, valves adjusted properly and spark timing correctly delivered.

If you leave old gas in carburetors for more than a few weeks, the pilot jets are generally the first orifices to plug up.
