when I am getting up to speed my A/C seems to shut off untill I let of the gas. How can I fix it?

The A/C compressor will shut off then you have the accelerator pedal to the floorboard. But I don't think that's your concern. What I believe is happening is that the air is no longer coming out of the vents. This would be due to low vacuum in the HVAC system. There are many causes for this. Low vacuum. restricted or broken vacuum hoses, a leaking HVAC door vacuum actuator, a faulty HVAC control head or even a problem with the engine where it cannot develop and maintain enough vacuum. As you can see there is no quick fix. You will need to find the cause for this on your own. Or you could take it to someone who can find the problem for you, as there is no way for me to solve this problem for you in an online forum.
