Trying to figure out the reason my 1992 Mercedes 500sl upshifts hard?

The governor may be sticking or the accelerator control module may be bad. I would suggest that you have an independent Transmission shop that is familiar with Mercedes test drive it.
You did not state the mileage, or the length of time since the last transmission service, but these can affect the fluid and the transmission operational quality.
