Land Rover Repair: temperature control sensors, control sensors, automatic discovery

I have a 1993 V8 Automatic Discovery that runs fine when it is cold or not running at operating temperature, however when the car has been driving for about half an hour or so, and therefore at operating temp it coughs and splutters at anything over approx. 2,000rpm, i have been told to either check or replace the temperature control sensors as these may be causing the car to either run too rich or lean, in this case i believe to rich.I have replaced the ignition leads and fuel filter at this stage. Does this sound like good advice or would you recommend looking elsewhere?

That's nothing more than a guess.  There are many possible causes for that symptom and it's just as likely to be some other problem as a temp sensor.  I suggest you find a shop with a T4 or Autologic test system and have them drive it while watching the live data stream to see what is actually going on.  That's a lot more effective than guessing.
